With v3, v4, v5 they added Kong drums, combinator and Thor (don't remember which one for which version) but I think they kept the same GUI. I didn't jump into v6 but I returned at v7 and kept with it till now (not my first DAW though).
I stopped using Reason around ver. 3. I really liked the UI of 2.5 - simple and made sense (well to me it did anyways).
I started my computer music with Logic 4 on PC and I loved the interface, so futuristic and well done. I kept with v5 till I moved from Win 98 to Win 2000 and the problems began. So, I moved to Cubase SL/SX and kept there for a long time then Sonar 4 and kept jumping between DAWs till now!
I loved Logic 5. Not for it's overall workflow, per se, but for it's ability to stuff a crap ton of GUI onto a 1024x768 screen. Once Apple took over mid-6, it's been downhill ever since.

Anyway, Logic 11.1 is really good. When I'm on Mac, I use it besides Live 12 and Reason 13.
Still, GUI, although it is very important, it is not the main factor for me in choosing my DAW(s). Stabiliy and workflow come first.
