There isn't really a great reason to "force yourself" to not change shortcuts to your liking in Bitwig. I can possibly see an argument for that if you were new to DAWs all together, and relying on video tutorials heavily to learn absolute basics where they may be using Bitwig's standard shortcuts. You can customize and define a shortcut for seemingly almost every operation in Bitwig, so do it.
Here is a suggestion that is good for any DAW: You can integrate something like 3rd party key macro programs into your workflow if that makes things easier for your condition. I know some people use Maestro for Mac or Autohotkey for Windows. I use a 20 button MMO mouse that has some multi=key press macros set up on it's buttons while using any DAW and that's always been a great workflow asset for me.
